Ingredients

  • 6 oz. grated Colby cheese
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 teaspoon lemon juice
  • 1/2 teaspoon paprika
  • 1 1/2 pounds boiled shrimp, peeled and deveined

Instructions

  1. Melt grated cheese on low heat in a small saucepan, stirring constantly.
  2. When melted, add mayonnaise and stir until blended.
  3. Add sour cream, lemon juice, and paprika; blend well.
  4. Remove from heat.
  5. Cut toast diagonally and arrange boiled shrimp on top of the toast.
  6. Pour the cheese mixture over the shrimp and serve.
