Ingredients

  • 12 jumbo shrimp, shelled, deveined, and tails intact
  • 1 c. olive oil
  • 3 Tbsp. Marsala or dry white wine
  • 2 Tbsp. minced parsley
  • 2 cloves garlic, crushed
  • 1 tsp. salt
  • several grindings of fresh pepper

Instructions

  1. Soak the shrimp in buttermilk overnight or for 4 to 6 hours.
  2. Wash the shrimp well, removing the buttermilk coating.
  3. Drain the shrimp on paper towels.
  4. Squeeze lemon juice over the shrimp.
  5. Roll the shrimp in a mixture of cracker meal, flour, and a small amount of cornmeal if desired.
  6. Fry the shrimp in a heavy skillet (cast-iron) with enough Crisco plus 1 tablespoon of butter to cover the bottom of the pan well.
