Ingredients

  • 8 egg yolks
  • 8 egg whites
  • 2 tsp. grated lemon rind
  • 2 tsp. almond extract
  • 1 1/3 c. flour
  • 1 1/4 c. sugar
  • 1 1/2 Tbsp. water
  • 1/4 tsp. salt

Instructions

  1. Use a large mixing bowl. Sift 1/2 cup of sugar with flour several times to blend well.
  2. Place egg yolks, water, and grated lemon rind in the bowl. Beat lightly.
  3. Add almond extract to the egg yolk mixture.
  4. Gradually sift flour very lightly over the beaten egg yolks.
  5. Fold in the flour gently into the egg yolk mixture.
