  • 8 fluted lasagna noodles
  • 3 Tbsp. butter or margarine
  • 1 red pepper, seeded and chopped
  • 1/2 cup chopped onion
  • 2 (10 oz.) packages frozen chopped spinach, cooked, squeezed dry and briefly sautéed
  • 2 cups shredded Mozzarella cheese
  • 3/4 cup Ricotta cheese
  • 3/4 cup Parmesan cheese
  • 1 slightly beaten egg
  • 1/2 stick butter or margarine
  • 1/4 cup flour
  • 1/8 tsp. pepper
  • 1/2 tsp. salt

Instructions

  1. Preheat oven to 375°F.
  2. Cook lasagna noodles according to package directions. Drain and cool in cold water.
  3. In a skillet, sauté red pepper and onion in 3 tablespoons of butter until tender.
  4. Combine cooked spinach, sautéed pepper and onion, 1 1/2 cups of mozzarella, ricotta cheese, 1/2 cup of Parmesan cheese, and a slightly beaten egg; mix well.
  5. Spread some of the remaining butter in a baking dish.
  6. Lay each noodle flat, spread with spinach mixture, then roll up.
  7. Place rolled noodles seam-side down in the prepared baking dish.
  8. Top with remaining mozzarella and Parmesan cheese.
  9. Bake uncovered for about 30 minutes until cheese is bubbly and golden.
