Ingredients

  • 1 Tbsp. butter or margarine
  • 1/2 cup finely chopped onion
  • 1 small clove garlic, crushed
  • 1/4 teaspoon dried oregano
  • 1 box (10 oz.) frozen chopped spinach, thawed
  • 1 container (15 oz.) low-fat Ricotta
  • 1/4 cup Parmesan
  • 4 oz. low-fat Mozzarella cheese

Instructions

  1. In a small skillet, melt butter over medium heat.
  2. Add chopped onion and crushed garlic.
  3. Cook and stir for about 3 minutes.
  4. Squeeze liquid from thawed spinach, then chop.
  5. In a medium bowl, combine the onion mixture, spinach, ricotta, Parmesan, and mozzarella cheese.
  6. Cut the dough crosswise into 6 equal pieces.
  7. On a lightly floured surface, roll out each piece of dough and fill with the spinach mixture.
  8. Seal the calzones and place them on an ungreased baking sheet.
  9. Bake for 10 to 15 minutes until golden brown.
