Simple Hamburger Vegetable Soup

Ingredients

  • 1 lb hamburger
  • 1 quart tomatoes
  • 1/2 teaspoon thyme
  • 1 (14 ounce) can carrots, peeled and cut-up or 4 fresh carrots
  • 1 cup celery
  • 1 onion
  • 1/2 teaspoon basil
  • 1 bay leaf
  • 1 (8 3/4 ounce) can corn
  • 1 cup potato, diced

Instructions

  1. Brown beef and onion.
  2. Drain.
  3. Combine everything in a large pot and simmer for about an hour.
  4. Good soup to use leftovers in - beans, zucchini, etc. Very good the next day.
