Simply Marinated Cucumbers

Ingredients

  • 3 cucumbers, peeled, seeded, halved lengthwise and sliced
  • 1/2 cup sliced scallion, white and light green parts
  • 1/2 cup red wine vinegar
  • 1/4 cup white sugar
  • 1/4 - 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon dill weed

Instructions

  1. Place cucumbers and scallions in a large bowl.
  2. In a seperate bowl, whisk together red wine vinegar, sugar, salt, pepper, and dill. Pour over the cucumber/scallion mixture.
  3. Toss to coat evenly.
  4. Chill for about 2 hours. Toss again before serving.
