A refreshing and fruity dessert salad combining cherries, pineapple, and Ski with a creamy gelatin base, perfect for summer gatherings or holiday celebrations.

Ingredients

  • 1 can sweet cherries
  • 1 (6 oz.) strawberry gelatin
  • 2 cups Ski
  • 1 can crushed pineapple
  • 1 (8 oz.) cream cheese
  • 1/2 cup chopped nuts

Instructions

  1. Drain the sweet cherries and crushed pineapple, reserving the juice in a saucepan.
  2. Bring the juice to a boil over medium heat and remove from heat.
  3. Add the strawberry gelatin to the hot juice and stir until dissolved.
  4. Beat the cream cheese until fluffy and smooth.
  5. Add the cream cheese to the gelatin mixture and mix well.
  6. Add the fruit and Ski to the mixture, using 1 to 2 cups depending on desired firmness.
  7. Pour the mixture into a 9 x 13-inch glass dish.
  8. Refrigerate for several hours until set and chilled.
