Ingredients

  • 4 (3/4-inch) pork chops
  • salt and pepper
  • 1 tsp. vegetable oil
  • 4 green pepper rings
  • 1 (16 oz.) can whole tomatoes
  • 1/2 c. uncooked quick cooking rice

Instructions

  1. Lightly sprinkle pork chops with salt and pepper.
  2. Heat vegetable oil in a skillet over medium-high heat.
  3. Brown pork chops on both sides, then reduce heat.
  4. Drain tomatoes and add the liquid to the skillet.
  5. Coarsely chop the tomatoes and add them to the skillet with the pork chops.
  6. Stir in the uncooked quick cooking rice.
  7. Place a green pepper ring on each pork chop.
  8. Cover and simmer for 40 to 45 minutes or until chops are tender.
