Ingredients

  • 1 1/2 lb. beef chuck
  • 2 large onions, sliced
  • 1 1/2 c. hot water
  • 1 tsp. salt
  • 1/4 c. chopped parsley
  • 6 medium potatoes
  • 2 Tbsp. butter
  • 1/4 c. beer
  • 1/2 tsp. pepper

Instructions

  1. Cut meat into 1/4-inch thick slices and pound slightly.
  2. Cut potatoes into thick slices.
  3. Heat the butter and saute the onions in it.
  4. Add the meat slices and brown on both sides.
  5. Remove to a plate and add the hot water, salt and pepper to the frying pan. Stir well.
  6. Using a casserole dish, layer the meat and potatoes; add the liquid from the frying pan and then the beer.
  7. Bake at 375° for 1 hour or until meat is tender.
  8. When ready to serve, sprinkle with parsley.
