Slice & Bake Peppermint Cookies

- Combine butter and sugar in bowl.
- Beat at medium speed, scraping bowl often, until creamy.
- Add egg and peppermint extract.
- Continue beating until well mixed.
- Add flour and baking powder; beat at low speed until well mixed.
- Divide dough into thirds.
- Add red food color to one-third.
- Add green food color to another third.
- Stir each until well mixed.
- Leave remaining dough white.
- Wrap each dough in plastic food wrap; refrigerate 1 hour or until firm
- Divide each color of dough into thirds.
- Shape each third into 12x1/2-inch rope on waxed paper.
- Gently press together 1 pink and 1 green rope.
- Add 1 white rope; gently press to form clover leaf-shaped multicolored roll.
- Repeat with remaining dough.
- Wrap each multicolored roll in plastic food wrap; refrigerate 2 hours or overnight until firm.
- Heat oven to 350F.
- Cut rolls into 1/4-inch slices.
- Place 1 inch apart onto ungreased cookie sheets.
- Bake 9-12 minutes or until edges are very lightly browned.
