Slim Baked Potatoes

Ingredients

  • 4 baking potatoes
  • 1 tsp. butter or margarine
  • 2 Tbsp. onion, chopped
  • 1 c. peeled and chopped tomato
  • 1 Tbsp. parsley, chopped
  • 1/4 tsp. salt
  • 1/2 tsp. dried oregano
  • dash of pepper

Instructions

  1. Prick potatoes with fork.
  2. Bake 425° for 55 to 60 minutes. While potatoes are baking, melt butter in small saucepan.
  3. Add onion and cook until tender.
  4. Add remaining ingredients.
  5. Simmer 10 minutes.
  6. Keep warm until potatoes are done.
