Ingredients

  • 1 box vanilla cookies
  • 1 lb cream cheese
  • 3 eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla

Instructions

  1. Place a cupcake liner in each compartment of a cupcake pan.
  2. In a blender, mix cream cheese, eggs, sugar, and vanilla until smooth.
  3. Spoon 2 tablespoons of the cream cheese mixture into each cupcake liner.
  4. Bake in the oven at 350°F (175°C) for about 15 minutes or until set.
  5. Remove from oven and allow to cool.
  6. Remove the liners from the pan and cover each with 1 tablespoon of fruit glaze.
  7. Refrigerate the cheesecakes until chilled and serve.
