Smashed Carrots

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons chopped shallots
  • 1/2 teaspoon ground coriander
  • 1 pound carrots, peeled and cut into 1-inch rounds
  • 1/2 cup orange juice
  • 2 teaspoons honey
  • Kosher salt and freshly ground black pepper to taste

Instructions

  1. 1. Melt the butter in a heavy pan over medium heat.
  2. 2. Add the shallots and saut until soft, about 3 minutes.
  3. 3. Add the coriander and cook, stirring, for 30 seconds.
  4. 4. Add the carrots, juice, honey, salt, pepper, and 1/2 cup water. Bring to a simmer.
  5. 5. Cover and cook until the carrots are tender, about 20 minutes.
  6. 6. Remove from heat, mash with a fork or potato masher, and serve.
