Ingredients

  • 1/3 c. sugar
  • 1/4 c. non-iodized salt
  • 2 c. soy sauce
  • 1 c. water
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. pepper
  • 1/2 tsp. Tabasco Sauce
  • 1 c. dry white wine (Chardonnay)
  • Salmon chunks

Instructions

  1. Mix together sugar, salt, soy sauce, water, onion powder, garlic powder, pepper, Tabasco sauce, and white wine to create the brine.
  2. Submerge the salmon chunks in the brine and refrigerate for 8 or more hours.
  3. Rinse the salmon chunks after brining and pat dry.
  4. Air dry the salmon for 1 to 2 hours to develop a glaze.
