Ingredients

  • venison roast or loin
  • coarse ground black pepper
  • liquid smoke (1 bottle)
  • bacon strips

Instructions

  1. Marinate the venison roast in liquid smoke for 1 hour.
  2. Remove the roast from the marinade and sprinkle coarse ground black pepper all over.
  3. Pat the pepper into the roast with your hand to adhere.
  4. Wrap the roast with several strips of smoked bacon.
  5. Prepare the smoker according to the manufacturer's instructions.
  6. When the coals ash over, fill the drip pan with water.
  7. Liberally cover the coals with hickory chunks.
  8. Place the roast on the smoker and cook for 1 1/2 hours per pound.
