Ingredients

  • 8 ears fresh or frozen corn
  • 1/2 cup onion
  • 1/4 cup chopped bell pepper
  • 2 tomatoes peeled and chopped
  • 1/4 cup bacon drippings or canola oil
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • 2 slices bacon

Instructions

  1. Fry bacon and reserve drippings.
  2. Clean corn and cut lengthwise 1/4 inch from the top; scrape corn with the side of a blade of a knife to get corn milk.
  3. Mix all ingredients except grease; season and pour in hot grease or oil.
  4. Reduce fire to low.
  5. Cook covered for 45 minutes, stirring occasionally. Add water if it starts to stick.
