Ingredients

  • 1 cup yellow cornmeal
  • 2 teaspoons baking powder
  • 2 cups boiling water
  • 2 eggs
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1 cup milk
  • 1 tablespoon bacon drippings

Instructions

  1. Place the yellow cornmeal, baking powder, flour, and salt in a bowl.
  2. Scald with boiling water, stirring vigorously until combined.
  3. Add milk and slightly beaten eggs to the mixture.
  4. Heat bacon drippings in a medium-sized Pyrex bowl in the oven.
  5. Pour hot bacon drippings into the cornbread mixture and stir well.
  6. Pour all the batter into the Pyrex bowl with the bacon drippings.
  7. Bake in a 425°F oven for 45 minutes to 1 hour, or until the top is brown.
  8. Serve hot with a spoon, preferably with butter.
