Snappin' Turtle Cookies

Ingredients

  • 1/2 c. margarine, softened
  • 1 egg, separated
  • 1 1/2 c. flour
  • 1/4 tsp. salt
  • 1/2 c. brown sugar
  • 1 egg
  • 1/4 tsp. vanilla
  • 1/4 tsp. baking soda

Instructions

  1. Cream
  2. butter;
  3. gradually add sugar, beating until light and fluffy.
  4. Add
  5. 1 egg, 1 egg yolk, and vanilla, beating well. Combine flour,
  6. soda
  7. and
  8. salt; add to creamed mixture, mixing well.
  9. Chill 1 to 2 hours.
  10. Arrange pecan halves in groups of 5 on ungreased
  11. cookie
  12. sheets,
  13. resembling head and legs of turtles. Shape dough into 1 inch balls, and dip bottom edges into remaining egg
  14. white.
  15. Press
  16. gently
  17. onto
  18. pecans to resemble turtle bodies.
  19. Bake
  20. at
  21. 350°
  22. for
  23. 10
  24. to
  25. 12
  26. minutes; cool. Spread chocolate
  27. frosting
  28. on
  29. tops
  30. of cookies.
  31. Yields 2 1/2 dozen.
