Snappy Gazpacho
Ingredients
- 1 c. tomato pieces ⓘ
- 1/2 c. celery chunks ⓘ
- 1/2 c. carrot chunks ⓘ
- 2 tsp. fresh parsley ⓘ
- 1/2 c. green pepper chunks
- 1/2 c. cucumber chunks ⓘ
- 1/4 c. onions
- 1 tsp. chives ⓘ
- 1 garlic clove
- 2 Tbsp. olive oil ⓘ
- 2 to 3 Tbsp. wine vinegar ⓘ
- 1/2 tsp. Worcestershire sauce ⓘ
- 1/4 tsp. fresh ground pepper
- 2 to 3 c. Snap-E-Tom cocktail juice to taste ⓘ
Instructions
- Chop all the vegetables in food processor until of consistency you like.
- Combine with the other ingredients.
- Cover and chill thoroughly, at least 4 hours if possible.
- Keeps well in refrigerator for days.
