Ingredients

  • 2 envelopes unflavored gelatin
  • 1 cup sugar
  • 1 teaspoon lemon juice
  • 1 large angel food cake, torn into pieces
  • 4 tablespoons cold water
  • 1 cup hot water
  • 1 cup coconut
  • 1 cup pineapple juice
  • 1 cup crushed pineapple
  • 3 small packages Dream Whip
  • 1/2 teaspoon salt

Instructions

  1. Dissolve the unflavored gelatin in cold water.
  2. Add hot water, sugar, salt, pineapple juice, and crushed pineapple. Chill until thickened.
  3. Prepare two packages of dessert topping according to the instructions on the package.
  4. Fold the whipped topping into the thickened gelatin mixture.
  5. Gently fold in torn angel food cake pieces.
  6. Pour the mixture into a 9 x 13-inch pan and chill overnight.
  7. Prepare the remaining whipped topping and spread it over the chilled cake.
  8. Sprinkle the cake with coconut before serving.
