Ingredients

  • 2 envelopes Knox gelatine
  • 1/4 cup cold water
  • 1 1/2 cups orange juice
  • 1/8 teaspoon salt
  • 1 large angel food cake
  • 1 cup boiling water
  • 1/4 cup lemon juice
  • 1 cup granulated sugar
  • 1 pint whipping cream

Instructions

  1. Soften the gelatin envelopes in cold water for 10 minutes.
  2. Add boiling water and stir until the gelatin is dissolved.
  3. Mix in salt, sugar, and orange juice and let cool until set.
  4. Meanwhile, remove the crust from the angel food cake and tear the cake into small pieces.
  5. Line a mold or round bowl with wax paper.
  6. Whip one cup of cream until soft peaks form.
  7. Fold the whipped cream into the cooled gelatin mixture.
  8. Pour a layer of the gelatin mixture into the prepared mold.
  9. Add a layer of cake pieces.
  10. Repeat layers, ending with the gelatin mixture on top.
  11. Refrigerate until firm.
  12. Unmold the dessert and frost with the remaining whipped cream.
  13. Sprinkle with coconut before serving.
