Ingredients

  • 2 lb. frozen hash browns, thawed
  • 1 c. onion, diced
  • 1 can cream of mushroom soup
  • 1 lb. sour cream
  • 1 stick melted butter
  • 8 oz. grated Cheddar cheese
  • salt and pepper to taste
  • 1 c. crushed potato chips

Instructions

  1. In a large bowl, combine thawed hash browns, diced onion, cream of mushroom soup, sour cream, melted butter, grated Cheddar cheese, salt, and pepper.
  2. Pour the mixture into a greased casserole dish.
  3. Cover the casserole with foil and bake at 350°F for 45 minutes.
  4. Remove the foil and sprinkle crushed potato chips on top.
  5. Return to the oven and bake uncovered for an additional 15 minutes until golden brown.
