Ingredients

  • 1 cup sifted all-purpose flour
  • 1/2 cup soft butter or margarine
  • 1 cup finely chopped pecans
  • 2 tablespoons granulated sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • confectioners sugar

Instructions

  1. In a large bowl, combine all ingredients except confectioners sugar.
  2. Mix with hands until thoroughly blended.
  3. Refrigerate the dough for 30 minutes.
  4. Preheat oven to 375°F.
  5. Form the chilled dough into 1 1/4-inch balls and place on an ungreased cookie sheet, 1 inch apart.
  6. Bake for 15 to 20 minutes until set but not brown.
  7. Let the cookies stand for 1 minute after baking.
  8. Remove from the sheet and cool partially on wire racks.
  9. While still warm, roll the cookies in confectioners sugar, then roll again for a snowy coating.
