Ingredients

  • 1 c. Smart Beat margarine
  • 2 1/2 c. powdered sugar
  • 1 Tbsp. vanilla
  • 2 tsp. almond extract
  • 2 Egg Beaters
  • 2 1/2 to 3 c. self-rising flour
  • 3 Tbsp. granulated sugar
  • 1 Tbsp. cinnamon

Instructions

  1. Cream together Smart Beat margarine, powdered sugar, vanilla, almond extract, and Egg Beaters until smooth.
  2. Add self-rising flour and blend thoroughly.
  3. Chill the dough for 1 hour.
  4. On a small plate, mix together granulated sugar and cinnamon.
  5. Drop dough by spoonfuls into the cinnamon-sugar mixture.
  6. Sprinkle cinnamon-sugar mixture over the dough until well coated.
  7. Place the coated balls on a cookie sheet that has been sprayed with Pam.
  8. Bake at 375°F for 8 to 10 minutes.
