Ingredients

  • 1/2 cup chicken broth
  • 1/4 cup shoyu
  • 1/2 cup rice vinegar
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon dry mustard
  • 1 slice ginger, minced
  • 1 package soba noodles, cooked

Instructions

  1. Heat all sauce ingredients (chicken broth, shoyu, rice vinegar, sugar, salt, dry mustard, and minced ginger) and set aside to cool.
  2. Cook soba noodles in boiling water until barely tender.
  3. Drain and rinse the noodles well in cold water.
  4. Refrigerate the noodles until ready to serve.
  5. When serving, dip the noodles in the cooled sauce with chopsticks and slurp, or mix the noodles with the sauce like a pasta salad.
