Ingredients

  • 2 lb. chicken, cut up
  • 3 Tbsp. soy sauce
  • juice of 1 lemon
  • 5 c. cold water
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. butter
  • 2 hard-cooked eggs, sliced
  • 1 piece chorizo de bilbao, sliced
  • 1 c. Vienna sausage, sliced
  • 1 c. broth
  • 1 piece carrot, cut into cubes
  • 1 piece potato, cut into cubes
  • 1/2 c. green olives
  • 1/2 c. mushrooms
  • 2 Tbsp. flour

Instructions

  1. Marinate chicken in soy sauce and lemon juice, then let stand for 15 minutes.
  2. Place chicken in a saucepan, add cold water, salt, and pepper. Simmer until tender and almost all the water has evaporated. Set aside.
  3. Melt butter in a skillet over medium heat.
  4. Brown the cooked chicken pieces in the butter.
  5. Add sliced chorizo de bilbao and Vienna sausage to the skillet.
  6. Pour in broth, cover, and cook until half done.
  7. Add green olives, diced carrots, potatoes, and mushrooms to the skillet.
  8. Cook everything together until vegetables are tender.
  9. Thicken the mixture with 2 tablespoons of flour if necessary.
  10. Transfer the cooked mixture to a Pyrex dish, garnish with sliced hard-cooked eggs.
  11. Cover the dish with pie crust.
  12. Bake at 400°F for about 35 to 40 minutes or until the crust is golden brown.
  13. Serve hot.
