Ingredients

  • 3 c. sugar
  • 2 c. whipping cream
  • 1/4 c. butter
  • 1/4 c. light corn syrup
  • 1 Tbsp. vanilla

Instructions

  1. Combine all ingredients except vanilla in a buttered heavy saucepan.
  2. Cook over medium heat, stirring often, until the mixture reaches the soft ball stage at 240° on a candy thermometer.
  3. Let the mixture cool slightly.
  4. Add vanilla and beat until spreading consistency is achieved.
  5. Use to frost or fill cakes as desired.
