Ingredients

  • 2 lb. fish
  • 2 Tbsp. butter
  • 2 tsp. salt
  • 1/2 tsp. seasoned salt
  • 1/8 tsp. pepper
  • 1 1/4 c. milk
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 c. grated Cheddar

Instructions

  1. Preheat oven to 350°.
  2. In 1-quart saucepan, melt 2 tablespoons butter; brush over sole.
  3. Sprinkle with seasoning.
  4. Roll up each fillet and place seam side down in greased shallow baking pan. Melt milk, 3 tablespoons butter and flour and stir.
  5. Pour 1/2 cup of mixture over fillets and bake for 25 minutes.
  6. Melt cheese, sherry and paprika and stir; after baking fish, pour the remaining milk mixture into cheese mixture and pour over fish, broiling until brown.
