Ingredients

  • 5 segments garlic, crushed
  • 1/4 cup olive oil
  • 2 slices bread, cut in cubes
  • 6 cups chicken or beef broth
  • 3 eggs, beaten
  • salt to taste

Instructions

  1. In a saucepan, sauté crushed garlic in olive oil.
  2. Fry bread cubes in the same oil until golden and set aside.
  3. Remove 2 tablespoons of oil from the saucepan.
  4. Return the garlic to the saucepan and pour in the chicken or beef broth.
  5. Bring to a boil, then stir in beaten eggs.
  6. Season with salt to taste.
  7. Just before serving, add the fried bread or croutons to the soup.
