Ingredients

  • 6 cups hot cooked sweet potatoes
  • 3/4 to 1 cup sugar
  • 1/4 cup butter or margarine
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon nutmeg
  • 3 eggs

Instructions

  1. Place sweet potatoes, sugar, butter, vanilla, and nutmeg in a large mixing bowl; beat until smooth and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Pour the mixture into a souffle dish or 2-quart casserole.
  4. Bake at 400°F for 30 minutes.
  5. Serve while hot.
