Ingredients

  • 4 slices bacon
  • 1 tomato, chopped
  • 1 onion, chopped
  • 1 cup long grain rice
  • 1/2 cup ham, chopped
  • 1 cup tomato juice

Instructions

  1. Fry bacon in a skillet until crispy and drain excess fat.
  2. Add chopped onion and long grain rice to the bacon drippings in the skillet.
  3. Cook for 5 to 10 minutes until the rice is translucent, stirring occasionally.
  4. Transfer the skillet mixture to a casserole dish along with chopped tomato, ham, and tomato juice.
  5. Cover the casserole dish with a lid or foil.
  6. Bake at 350 degrees Fahrenheit for 30 minutes until cooked through.
