Ingredients

  • 1/2 stick oleo (butter)
  • 1 cup sugar
  • 1 cup flour
  • 2 teaspoons baking powder
  • 3/4 cup milk
  • Fresh, frozen or canned wet pack unsweetened fruit (e.g., tart cherries, raspberries, strawberries, blueberries)

Instructions

  1. Preheat oven to 350°F.
  2. Put oleo (butter) in a casserole dish and melt it as the oven preheats.
  3. Mix sugar with flour and baking powder in a bowl.
  4. Add milk to the mixture and stir well to form a thin batter.
  5. Pour the batter into the casserole dish with melted oleo.
  6. Open the can or package of fruit and pour the contents into the center of the batter without stirring.
  7. Bake in the oven for about 45 minutes until the cake rises to the top.
  8. Garnish with hard sauce made by mixing oleo with confectioners sugar before serving.
