Ingredients

  • 6 slices bacon
  • 2 large unpeeled baking potatoes
  • 3 Tbsp. vegetable oil
  • 1/2 tsp. garlic salt
  • 1/8 tsp. black pepper
  • 1/4 cup barbecue sauce
  • 1 cup shredded Colby cheese
  • 1/3 cup sliced green onions
  • 1/4 cup chopped fresh parsley or 4 tsp. dried parsley
  • 1/2 cup sour cream (optional)

Instructions

  1. Fry bacon until crisp; drain and crumble.
  2. Line 2 large baking sheets with foil.
  3. Preheat oven to 400°F (200°C).
  4. Scrub and dry unpeeled baking potatoes, then cut them into wedges or cubes.
  5. In a large bowl, toss potatoes with vegetable oil, garlic salt, and black pepper.
  6. Arrange potatoes on prepared baking sheets and roast for 30-40 minutes until golden and tender.
  7. Remove potatoes from oven and drizzle with barbecue sauce.
  8. Sprinkle shredded Colby cheese over the hot potatoes and return to oven for 5 minutes until cheese melts.
  9. Garnish with sliced green onions and chopped parsley.
  10. Top with crumbled bacon and serve with sour cream if desired.
