Spaghetti Squash Dinner

A hearty, cheesy spaghetti squash casserole featuring roasted squash, sautéed vegetables, tomatoes, and herbs, perfect for a wholesome vegetarian dinner full of flavor and texture.

Ingredients

  • 1 spaghetti squash
  • 1 cup chopped onion
  • 2 cups Highland Orchards tomatoes
  • 1 cup cottage cheese
  • 1/2 pound mushrooms
  • 1/2 teaspoon oregano
  • 2 cloves garlic or garlic powder
  • salt
  • pepper
  • 1 cup grated mozzarella
  • 1 teaspoon basil

Instructions

  1. Slice the spaghetti squash lengthwise and scoop out the seeds.
  2. Bake face down in a buttered, aluminum-lined tray at 375°F for about 30 minutes or microwave for 15 to 20 minutes at full power.
  3. Let the squash cool, then scoop out the long strands inside.
  4. While the squash is baking, sauté chopped onions with salt, garlic, pepper, sliced mushrooms, oregano, basil, and thyme.
  5. When the onions are soft, add the Highland Orchards tomatoes.
  6. Cook until most of the liquid evaporates, then combine with the squash strands.
  7. Pour the mixture into a buttered 2-quart casserole dish.
  8. Top with grated mozzarella cheese.
  9. Bake at 375°F for another 40 minutes until bubbly and golden.
