Spaghetti Squash Dinner
A hearty, cheesy spaghetti squash casserole featuring roasted squash, sautéed vegetables, tomatoes, and herbs, perfect for a wholesome vegetarian dinner full of flavor and texture.

- Slice the spaghetti squash lengthwise and scoop out the seeds.
- Bake face down in a buttered, aluminum-lined tray at 375°F for about 30 minutes or microwave for 15 to 20 minutes at full power.
- Let the squash cool, then scoop out the long strands inside.
- While the squash is baking, sauté chopped onions with salt, garlic, pepper, sliced mushrooms, oregano, basil, and thyme.
- When the onions are soft, add the Highland Orchards tomatoes.
- Cook until most of the liquid evaporates, then combine with the squash strands.
- Pour the mixture into a buttered 2-quart casserole dish.
- Top with grated mozzarella cheese.
- Bake at 375°F for another 40 minutes until bubbly and golden.
