Spanish Tomatoes

A hearty Spanish-inspired tomato dish featuring bread, cheese, and fresh vegetables, perfect for casual gatherings or a comforting family meal with rich flavors.

Ingredients

  • 1/2 loaf salt rising bread
  • 2 qt. tomatoes
  • 1 small green pepper
  • 1 small onion
  • 1/2 to 3/4 cup sugar
  • 1/4 cup oleo or butter
  • 1/4 cup Parmesan cheese
  • 2 or 3 slices Mozzarella cheese

Instructions

  1. Break the salt rising bread and place it in a 9 x 10-inch baking dish.
  2. Cut the small green pepper and small onion into 1-inch slices.
  3. Add sugar, green pepper, and onion to the tomatoes.
  4. Pour the tomato mixture over the bread in the baking dish.
  5. Shake Parmesan cheese on top of the tomatoes.
  6. Bake at 350°F for 1 hour, then stir the mixture.
  7. Bake for an additional 30 minutes.
  8. Place 2 or 3 slices of Mozzarella cheese on top and let it melt.
