Ingredients

  • 3 ears fresh corn, sliced off
  • 3 small zucchini, sliced
  • 1/2 cup diced onion
  • 3 medium-sized fresh tomatoes, diced
  • 1/2 teaspoon cumin
  • 1 teaspoon basil
  • 2 cloves garlic, crushed

Instructions

  1. Saute onion in oil until tender.
  2. Add diced tomatoes and spices; saute for 15 minutes.
  3. Add corn and zucchini.
  4. Pour 2 1/2 to 3 cups water to cover vegetables.
  5. Simmer with covered lid for 35 minutes.
