Ingredients

  • 5 lb. small green tomatoes
  • 2 c. vinegar
  • 1 tsp. whole cloves
  • 1 Tbsp. white mustard seed
  • 4 c. white sugar
  • 1 Tbsp. stick cinnamon
  • 1 tsp. whole allspice

Instructions

  1. Combine sugar, vinegar, whole cloves, white mustard seed, stick cinnamon, and whole allspice; bring mixture to the boiling point.
  2. Pour the hot mixture over the tomatoes and let stand for 4 hours or overnight.
  3. Drain off the liquid and cook until it coats a spoon.
  4. Add the tomatoes to the syrup and cook until clear, about 12 minutes.
  5. Seal in clean hot jars immediately.
