  • 7 lb. muscadine grapes
  • 1 pt. vinegar
  • 4 lb. sugar
  • 3 Tbsp. whole cinnamon
  • 2 Tbsp. whole cloves
  • 1 Tbsp. allspice

Instructions

  1. Wash the muscadine grapes and slip the pulp from the skins.
  2. Steam the pulp over hot water in a double boiler until it can be mashed through a sieve to remove seeds.
  3. Combine the skins and pulp.
  4. Tie the spices (cinnamon, cloves, allspice) loosely in a cheesecloth bag and lightly pound them.
  5. Add the vinegar, sugar, and spice bag to the grape mixture.
  6. Cook the mixture until it becomes very thick.
  7. Remove the spice bag from the mixture.
  8. Pack the hot preserve into pint jars, leaving ½ inch headspace.
  9. Wipe the jar mouths and adjust the lids.
  10. Process the jars in a boiling water bath canner for 5 minutes.
