Ingredients

  • 1 pint brown sugar
  • 1 pint salt
  • 1 teaspoon saltpeter
  • 1 teacup spices
  • a few cloves
  • mace

Instructions

  1. When the hog heads have been cleaned and soaked in salt water for some days, put them in a dinner pot and cook in plenty of water until very tender.
  2. Take out the hog heads and jowl, and with a fork, break up the meat finely; put in some of the juices and one pint of sifted meal to a head or more if you like.
  3. Return the mixture to the stove and boil for a few minutes.
  4. Can use the whole head and jowl, which makes it very nice.
  5. In this case, take off all the grease you can, mold the mixture, and fry in a hot skillet.

Tips & Substitutions

For a deeper flavor, consider adding crushed garlic or onion to the mixture. If you don’t have saltpeter, you can omit it or use a small amount of curing salt instead, though it may alter the taste. Adjust the spices to your preference; warm spices like cinnamon or nutmeg can enhance the dish. For a twist, serve with a side of Fried Noodles for a satisfying meal.

Serving Suggestions

Serve the Spiced Round warm, garnished with fresh herbs for a pop of color. It pairs wonderfully with tangy sauces or pickled vegetables, such as Squash Pickle Relish. For a hearty meal, consider serving it alongside a simple salad or roasted vegetables to balance the richness of the dish.

Storage & Reheating

Allow leftovers to cool completely before transferring them to an airtight container. They can be stored in the refrigerator for up to 3 days. To reheat, warm gently on the stove or in the microwave, adding a splash of water if the mixture seems dry, to maintain moisture and flavor.
