Ingredients

  • 9 medium apples
  • 4 Tbsp lemon juice
  • 1 c water
  • 1 packet Certo (1 1/2 Tbsp)
  • 1 1/2 Tbsp cinnamon
  • 7 1/2 c sugar
  • 1 tsp allspice

Instructions

  1. Peel and core the apples.
  2. Blend a small amount of apples with lemon juice and water until liquefied.
  3. Gradually add the remaining apples in batches, blending each until smooth.
  4. Pour the fruit mixture into a large pan.
  5. Add sugar, allspice, and cinnamon to the pan.
  6. Bring to a full rolling boil and cook for 1 minute, stirring constantly.
  7. Remove the pan from heat and immediately stir in the Certo (liquid pectin).
  8. Skim off any foam on top of the jam.
  9. Ladle the hot jam into sterilized glasses and seal with paraffin.
