Spicy beef topped baked potatoes feature seasoned ground beef and melted cheese, perfect for a hearty, flavorful meal that suits family dinners or casual gatherings.

Ingredients

  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 1/2 teaspoon salt
  • 2 large baking potatoes
  • 12 oz. jar picante sauce
  • 2 slices Cheddar cheese

Instructions

  1. Scrub potatoes; prick well all over with a fork.
  2. Microwave potatoes on High power for 8 to 10 minutes, rotating after about 4 to 5 minutes.
  3. Let stand.
  4. Combine ground beef and chopped onion; microwave on High for 3 minutes.
  5. Stir to break up beef; microwave for 3 more minutes.
  6. Drain excess fat and add picante sauce; cook on High for 1 to 2 minutes.
  7. Cut potatoes in halves; fluff the pulp.
  8. Sprinkle potatoes with salt.
  9. Spoon meat mixture on top of each potato half.
  10. Put a slice of cheddar cheese on each potato.
  11. Cover with foil tent for about 2 minutes to melt the cheese.
