Spicy Corn Pudding

Ingredients

  • 1 c. buttermilk
  • 1 Tbsp. baking powder
  • 1/4 c. vegetable oil
  • 1 (16 oz.) can creamed corn
  • 1 c. corn meal
  • 1 tsp. salt
  • 1 c. Cheddar cheese, grated
  • 1/4 c. jalapeno peppers, chopped

Instructions

  1. Combine all ingredients and pour into 3-quart casserole.
  2. Bake at 350° for 1 hour.
  3. It should have a "set" consistency.
  4. May be prepared ahead and bake just before serving.
  5. Serves 10.
