Ingredients

  • 24 oz. shoepeg corn (2 cans)
  • 8 oz. cream cheese
  • 1 stick butter
  • 1/4 cup milk
  • 1/2 tsp. seasoned salt
  • 1/4 cup chopped green chili peppers
  • tortilla chips

Instructions

  1. Preheat oven to 350°F (175°C). Drain the shoepeg corn and set aside.
  2. In a saucepan over low heat, combine cream cheese, butter, milk, and seasoned salt. Heat slowly, stirring to prevent sticking.
  3. Add the drained corn and chopped green chili peppers to the saucepan and stir until well combined and heated through.
  4. Pour the mixture into a buttered baking dish.
  5. Top with crushed tortilla chips.
  6. Bake in the preheated oven for 30 minutes until bubbly and golden.
