Ingredients

  • 1/2 c. sugar
  • 3 Tbsp. water
  • 1 scant tsp. salt
  • 1/2 tsp. cayenne pepper
  • 2 c. pecan halves

Instructions

  1. Preheat oven to 350°.
  2. Butter a heavy large baking sheet.
  3. Combine sugar, water, salt, and cayenne pepper in a heavy small saucepan.
  4. Stir over medium heat until sugar dissolves.
  5. Boil for 2 minutes.
  6. Add pecans and stir until they are coated with the mixture, about 1 minute.
  7. Transfer pecans to the prepared baking sheet, spreading them evenly.
  8. Bake until light brown, about 13 minutes.
  9. Transfer to a cookie sheet lined with wax paper and separate pecans with a fork.
  10. Cool completely.
