  • 1 c. cooked Minute rice

Instructions

  1. Soak peas in water overnight or bring to a boil; cover, reduce heat and simmer 3 minutes.
  2. Let peas stand for 1 hour.
  3. Drain tomatoes, reserve liquid, then chop tomatoes.
  4. Add chopped tomatoes and reserved liquid to the peas.
  5. Add the hot sausage, chopped onion, chopped celery, salt, chili powder, dried basil leaves, and bay leaf.
  6. Cover and cook on low heat for 3 to 4 hours or until peas are tender.
  7. Dice cooked sausage and return to the soup.
  8. Add cooked Minute rice, cover, and simmer for 30 minutes.
  9. Remove bay leaf.
  10. Serve hot.
