Spicy Stuffed Mandarins

Sweet and spicy stuffed mandarins feature tender fruit filled with dates, simmered in a flavorful syrup, perfect as a unique dessert or elegant treat for special occasions.

Ingredients

  • 8 mandarins
  • 4 pitted dates
  • 1 cup sugar
  • 3/4 cup water
  • 1/4 cup light corn syrup
  • 1/4 cup white wine vinegar
  • 6 whole cloves
  • 1/8 teaspoon salt

Instructions

  1. Wash mandarins, cover with water, and simmer for 20 minutes.
  2. Drain and cool enough to handle.
  3. Cut off a 1/4-inch top of each mandarin.
  4. Insert half of a pitted date into the core of each mandarin.
  5. Mix sugar, water, light corn syrup, white wine vinegar, whole cloves, and salt; heat to boiling, stirring until sugar is dissolved.
  6. Place mandarins in a baking dish.
  7. Pour 1/2 teaspoon of syrup over each filled mandarin and replace the top.
  8. Pour the remaining syrup over the mandarins.
  9. Bake in a 350°F oven for 20 minutes.
  10. Cool mandarins in syrup, then drain before serving.
