Ingredients

  • 2 lb. fresh spinach
  • 2 Tbsp. chopped anchovies
  • 1 clove garlic
  • 1/2 c. butter
  • salt

Instructions

  1. Wash spinach and pat dry.
  2. Tear into pieces and remove thick stems.
  3. Place in a large pan; sprinkle with salt, cover and cook a few minutes.
  4. Remove spinach from pan and squeeze out excess liquid.
  5. Melt butter in a skillet.
  6. Add the spinach, chopped anchovies, minced garlic, and pepper.
  7. Stir to combine all ingredients.
  8. Cook for 5 minutes over low heat.
