Spinach Calzones

Ingredients

  • 1 (10 oz.) pkg. pizza crust
  • 2 (10 oz.) pkg. frozen spinach
  • 1 cup grated Romano cheese
  • 2 cups shredded Mozzarella cheese
  • 1 (4 oz.) jar chopped pimentos, drained
  • 2 eggs, divided
  • 2 Tbsp. crushed red pepper

Instructions

  1. Preheat oven to 450°F.
  2. Roll out the pizza dough to a 21 x 14-inch rectangle.
  3. Cut out six 7-inch squares from the dough.
  4. Thaw the frozen spinach and squeeze out excess water until very dry.
  5. In a bowl, combine the chopped pimentos, grated Romano cheese, and one beaten egg.
  6. Spread a portion of the spinach mixture onto each dough square.
  7. Sprinkle shredded mozzarella cheese over the spinach filling.
  8. Brush the edges of each square with the remaining beaten egg.
  9. Fold the dough over the filling to form a triangular or half-moon shape and press the edges to seal.
  10. Place the calzones on a baking sheet lined with parchment paper.
  11. Bake in the preheated oven for 15 minutes or until golden brown.
  12. Remove from oven and let cool slightly before serving.
