Spinach Pie Super Simple

Ingredients

  • 4 -6 cups chopped spinach
  • 1 small red onion
  • 1 garlic clove
  • 12 cup parmesan cheese
  • 14 cup olive oil
  • 1 teaspoon salt
  • 1 dash pepper
  • 2 cups flour
  • 1 teaspoon salt
  • 1 cup water
  • 14 cup olive oil

Instructions

  1. In a bowl mix flour with 1 tsp salt and 1/4 cup olive oil.
  2. mix well with a fork.
  3. add 1 cup of water slowly.
  4. when dough forms a smooth ball dust with flour cover and let sit for 20 minutes.
  5. after 20 mins separate dough into 2 halves and roll out on a well floured surface.
  6. In a medium sized pot add 1/4 olive oil chopped onion , chopped garlic and cook till onion is clear.
  7. add spinach ,salt and pepper stir well , cover and let cook till spinach is tender.
  8. add 1/2 cup parmesan cheese stir well and remove from heat.
  9. take one half of the rolled out filo dough and place in a pie pan making sure to leave 1/2 inch of extra dough overhanging ( you will need to fold this over with the top layer to seal your pie).
  10. pour the spinach filling in and spread evenly.
  11. take the other layer of filo dough and lay it over the filling.
  12. take both edges of dough pinch together and roll in towards the center at a slight angle to seal.
  13. lightly brush the top with water.
  14. sprinkle with sesame seeds.
  15. pierce the top with a fork.
  16. bake at 350 for 15 mins or until golden brown on top.
